Katya made Split Pea Soup
Sauté 1 large onion (chopped) in olive oil
Add 2 c peas and 5 c water and boil
Simmer til soft
Add spinach Purée or mash half the peas
Recombine and add lemon juice, a drizzle of olive oil and paprika
